We're getting ready for our Community Seder which will be held on Monday, April 18 here at Adas Israel. Each year the number of people increases and we expect a "sold out" group very soon.
The Torah tells us that we must eat a specific food for the seven days of Pesach or Passover. That food is Matzah. While there are many "brands" of matzah the major rule is that from the time the water and flour are mixed until the matzah comes out of the (very hot) oven no more than eighteen minutes can go by.
Why?
Because the process or "rising" begins after 18 minutes and because we are were commanded to, "...eat no leavened bread; with it seven days you shall eat matzos, the bread of affliction; for in haste did you come forth out of the land of Egypt; that you might remember the day when you came forth out of the land of Egypt all the days of your life." (Deut. 16:3)
